Filipino Pork Barbecue

So, summer is almost upon us and some of us started making use of our back gardens already. Some street grills in the Philippines use this or a variation. So for a taste of one of the Philippines’ popular street food (or close to it), try this sweet recipe! This recipe will serve 6 people.
Marinade ingredients:
- 1.5 kilos pork shoulder steak
- 1 large garlic, minced
- 1/8 cup pineapple juice
- 1/8 cup lemon juice
- 1/2 cup soy sauce
- 1/4 cup light brown sugar
- 1/2 cup tomato sauce
- 1 1/2 cup ginger ale
Basting sauce:
- 1/2 cup soy sauce
- 1/4 cup light brown sugar
- 1/2 cup tomato sauce
Method:
- Slice the meat into approximately 1-inch thick x 1-inch wide x 1.5 inch long pieces. Season with pepper
- In a bowl, mix the garlic, pineapple juice, lemon juice, sugar, tomato sauce and ginger ale. Add the meat and seal/cover with cling film. Marinate in the refrigerator for at least 2 hours or over night.
- Soak the skewers (if using bamboo) for at least an hour.
- Prepare the basting sauce by mixing all the ingredients.
- String the meat on the skewers then cook over medium heat until done. Baste and turn as needed.
- Serve with rice or salad. Enjoy!
Note:
- You can make some sauce with the remainder of the basting sauce. In a small pan, simmer until it thicken and reduced halfway.
- You can reduce sugar by eliminating it from the marinade.
- I use a bbq tray to keep the meat from getting burnt.
